
Andrew Boyd
Business owner and fishmonger, Andrew Boyd, has an immense respect
and devotion to all things food related. The son of a baker, his childhood
was deeply immersed in the food industry.
First introduced to seafood at Monahan’s Seafood Market in Ann Arbor,
Michigan, Andrew was immediately hooked. “It is the sheer excitement of
seeing products in their most basic form that really tells of quality.”
While working as a chef in Sydney after graduating university, Andrew
made the decision to seek out prestigious seafood providore, Martin
Palmer, and joined Martin’s Seafoods in 2001.
“Martin was always into quality - for Martin’s Seafoods that is of prime
importance. He gave me the courage to be steadfast in my convictions and
never settle for less than the best.”
In October 2006, Andrew Boyd became principal partner of
Martin's Seafoods and promptly opened the first finefish at Neutral Bay in
March 2007.
Ashley Thomson
Ashley began his career in food with the highly regarded Armstrong’s
Restaurant in North Sydney. He furthered his experience with time at
Pavilion on the Park with Anthony Musarra and Bert’s at Bali Mow in
Buckinghamshire in the UK. Ashley then took the prestigious role as Sous
Chef at Bather’s Pavilion, Balmoral, a position he held for several years.
In August 2007, Ashley joined finefish to assist in the management of the
seafood counter. His dedication to quality and willingness to share not only
his culinary knowledge but also his enthusiasm for food, make him a
valuable member of the finefish team.

Paul Pereira
Executive Chef Paul Pereira has brought to finefish a vast and impressive
culinary CV, including Michelin starred restaurants in the UK. In Sydney,
Paul has worked at Sail’s on Lavender Bay and Delicado.
Paul’s attention to detail and ability to create stunning dishes are his
hallmarks. Paul manages to take worldly flavours and the best Australian
seafood to create a mouth watering menu. Working closely with Andrew,
Paul is always adapting the restaurant offerings to showcase what is most
interesting and relevant for each day.
